Melanger: the bean-to-bar classic

The stone melanger refines and conches at the same time, in the same machine — it is the heart of artisan bean-to-bar production. It is the machine for those who go from bean to bar in signature batches, with full control over flavor. A good chocolate takes 24 to 72 hours in it, because refining and conching happen together and without rushing.

SferaOne: the ball mill

When volume grows, the ball mill takes over refining. The SferaOne grinds the chocolate against thousands of circulating steel balls and reaches below 20 microns in just 2 to 3 hours, per 25-to-50 kg batch. It is the same principle used by large factories, at the scale of a workshop that became a brand.

ChocoMaster: the mill that also conches

The ChocoMaster is an industrial refining mill that combines refining and conching in a single body, with batches from 40 kg to 2 tonnes. It refines in the 20-to-25 micron range in 8 to 30 hours, depending on the formulation. It is the bridge between craft and industry: volume without losing control of the recipe.

In the melanger, which refines and conches at the same time, the full process usually takes 24 to 72 hours — and varies with the formulation, whether or not pre-refining is used, the variety and roast of the cacao, and the chocolate maker's taste. In the SferaOne ball mill, refining drops to 2 to 3 hours per batch, and in the ChocoMaster it runs between 8 and 30 hours, depending on the recipe and volume.
